Many know the story of Dracula and the origin of vampires being from the very Vlad Țepeș (The Impaler), son of Vlad Dracul (The Dragon/Devil). While during his life, he had done many atrocities
like impaling people and drinking their blood. Even so, many did not know that he bore children.

Little is known about his daughter Lilith/Zaleska Dracula who also had a thirst for blood like her father. Although, killing was not her style and she chose to deal with this by creating a substitute. You see, in those days, where magic and alchemy were abundant, all she had to do was come up with the right incantation, ingredients and rituals. Of course, she had to pull a couple of favors to get the recipe just right and thankfully, she had perfected something that has survived the centuries. It was hidden in Dracula’s Castle in Transylvania, until today!

American Strong Ale brewed with Black Hole Necromancer Remy Martin Cognac Barrel Aged Red Eye Unicorn Blood Espresso Coffee Beans, Maple Syrup and Oak aged in Maker’s Mark 46 Bourbon

==Introduction==

Project #30 was inspired by One of the ultimate Double Bastard variants called “Arrogant Bastard’s Midnight Brunch”. Double Bastard has always been one of my favorite beers from stone since the first time I found it long after trying Arrogant bastard. In Midnight Brunch, they took the Double Bastard, American Strong ale, added espresso beans and aged in in maple syrup and bourbon barrels. It was definitely a huge beer that made me a fan of making my own.

One of the beers that was similar but not exact was the Highwater Sugaree which used similar ingredients but added pecans. So essentially, I did research for a Double Bastard recipe. Then, to add my own ingredients, I added a very special coffee. The Black Hole Necromancer Remy Martin Cognac Barrel Aged Red Eye Unicorn Blood Espresso Coffee Beans (What a mouthful!!) from Dark Matter Coffee was the ingredient that was created in collaboration with Three Floyd’s Cognac Barrel aged Dark Lord Imperial stout in 2015. They took the barrels that had that beer and cognac and aged their Unicorn Blood Coffee Beans into it. Essentially, this would add a special key set of flavors to my brew not found in any of the other beers. Putting all that together and into a secondary with maple syrup and Maker’s Mark 46 Bourbon and half a year later out comes something that was very different from even from that of the Midnight Brunch. Now that I brought it here to the website, let’s have a look at this creation, Cheers!

Aromas:
Lots of maple syrup, bourbon, vanilla, mocha, coffee, oak, Cadbury caramel and chocolate cream eggs, Irish cream, Danish cream, campfire smores, peppery notes, pecan pie, port wine, hazelnut nectar, tiramasu cake, jamoca ice cream, maple coffee cake, dulce de leche caramel, toffee, dark fruit raisins, cherry, figs, dates, currants, stone fruit old mango, candied orange notes, chambord raspberry, marshmallows, toasted coconut, earthy dark chocolate, Mexican chocolate, milk chocolate, pancakes and flan.

Flavors:
Rich oak, vanilla, mocha, roasted coffee, fancy coffee, Khalua Coffee, peanut butter notes, marzipan, mazapan, pecan pie, port wine, bourbon, cognac hints, maple syrup, dulce de leche caramel, toffee, dark fruit raisins, cherry, figs, dates, currants, stone fruit old mango, candied orange notes, chambord raspberry, marshmallows, toasted coconut, earthy dark chocolate, Mexican chocolate, milk chocolate, pancakes, crème brulee, Cadbury caramel and chocolate cream eggs, Irish cream, Danish cream, campfire smores, pepper notes, banana, earthy hop notes, sweetened condensed milk, flan, fruit cake, capirotada raisin bread pudding, figgy pudding, molasses, tiramasu cake, jamoca ice cream and maple coffee cake.

Aftertaste:
Finishing with maple syrup pancake notes, earthy chocolate, oak, marshmallows, vanilla, dark fruit, toffee, caramel, crème brulee, flan and fruit cake. No alcohol in the taste despite the high 12% ABV. Amber Crimson Full body, smooth, velvety creamy and syrupy mouthfeel along with a sipping drinkability.

Overall:
Absolutely phenomenal! This is indeed a brunch or breakfast beer, if your breakfast is late at night. It has almost everything I loved about the Midnight Bruch from Stone but with the addition of the coffee and my own ingredients, the beer became some other creature entirely. The coffee added some most inner depth that I did not find in even the depth charged or the Midnight Brunch. While I feel it is worthy of a bucket lister, it would not make sense since this is such a rarity not found anywhere. This right next to Sangrileche 2 are probably the best beers I have ever made. Yet, some of my other barrel aged and other experimental batches have been the best too. It is hard to decide, but this is definitely on another level even for the different craft beers I have had in the past.

Anime Corner:
Lilith Aensland from Capcom’s Darkstalkers was used in this pairing as I have used her in many of the Stone beers including many of the double bastard iterations. While I did use Etna from Disgaea for the Stone Midnight Brunch, I wanted to pay tribute in my own creation to Lilith for coming up with an inspired beer. While she along with Morrigan are some of my favorite characters from the Darkstalkers series, it was only fitting that I used a beer that fits the curriculum of vampires having their brunch after hours when there is no sun outside. Essentially, when the name of “Midnight Brunch” came about, I could only think of how vampires probably do their breakfast or brunch at Midnight. So the story was born!

2017 Mash & French Toast by The Bruery is a 13.4% ABV Barleywine aged in Bourbon Barrels with Vanilla, Cinnamon and Nutmeg, Natural Flavors and Maple Syrup.

We took Mash, drizzled it with more gooey barrel character and added a morning mix of spices and maple notes.

This is our bourbon barrel-aged barley wine ale, Mash, joining forces with even stickier malt-forward forces from our barrel warehouse to create the gooey-sweet profile you’d expect from a French toast-like creation. It rouses the senses with hints of caramel and rich maple character, summoning spices and warm vanilla notes.

Released to the Reserve Society in 2017 with a possible release to the public. This is a new iteration for the Mash series. There have been many variations recently ranging from coffee, vanilla, coconut and now French Toast. The last time I can remember trying a French Toast like brew was when my friend Aaron Mendiola from BeerMetal.net sent me the “Brunch Money” by Armadillo Works in Texas. This one is quite unique as there aren’t many “French Toast” beers out there in general but based on the addition of ingredients in this beer, I can only tell that this is going to just like or close to French Toast as possible. Let’s take a look and see how this one is, cheers!

Aromas:
Cadbury Chocolate cream eggs, sweetened condensed milk, French Toast maple syrup, toffee, butterscotch, caramel, honey, cinnamon, nutmeg, waffle cone, clove spice, bananas, dark fruit prunes, plums, cherry, rocky road ice cream, rum soaked raisins, toasted coconut, chocolate marshmallow smores, graham crackers, pecan pie, vanilla, oak, bourbon and flan hints.

Flavors:
Rich French Toast maple syrup, toffee, butterscotch, caramel, honey, cinnamon, nutmeg, waffle cone, nutmeg, fruit cake, vanilla, oak, bourbon, rum soaked raisins, dark fruit prunes, plums, coffee cake, brown sugar, Danish cream, milk chocolate truffles, toasted coconut, marshmallow, chocolate smores, graham crackers, pecan pie, Cadbury Chocolate cream eggs, sweetened condensed milk, capirotada raisin bread pudding, rocky road ice cream hints, French vanilla, crème brulee, anise, molasses, macadamia nuts, hazelnut, flan, almonds, bananas and clove spice.

Aftertaste:
Finishes and long lingers with rich French toast, maple syrup, toasted coconut, oak, bourbon, vanilla, caramel, dark fruits and chocolate. Slight alcohol in the taste but not detracting from the flavors. Dark Crimson honey medium body, smooth, creamy, chewy and syrupy mouthfeel with a sipping drinkability.

Overall:
Ridiculous! This is damn exceptional! A bit boozy but will sure as hell age like a beast. Even now, I could tell, this is literally, freaking French Toast in liquid form. Granted, time will mellow out the slight alcohol from the flavor but to be honest it does not bother nor detract from the amazing flavors this already has. Yes, it is a brand new batch of barleywine right off the barrel but even so I can see how this will age awesomely. Their Mash series is definitely an amazing series and I hope to see more in the future. I highly recommend this one.

Anime Corner:
Q-Bee from Darkstalkers was chosen even though the beer is made with maple and not honey. The reason I went with this because just like honey, maple syrup is just as sticky and added to breakfast items like French Toast or waffles was similarly sweet. Even the design of the label was closer to a honey comb. This and the fact that Q-Bee’s weapons are utensils, I think it worked out nicely. Bees are attracted to sweet maple syrup too!

Derde Golf by The Bruery Terreux is a 12.3% ABV Belgian Sour Quadrupel Oak aged with Blackberries and Bourbon Barrel aged Old Ale with Portola Coffee Lab’s coffee beans.

It’s time for the third wave – a beer that awakens the senses from first sniff to first sip. This sour, blended ale folds our sour, oak-aged Belgian style quadrupel with blackberries into our malt-forward, bourbon barrel-aged old ale, and finishes with a Flemish good morning kiss, for an awakening, robust and sweet & sour twist. It’s complimented and balanced by the gentle, roasty character imparted from freshly roasted coffee from our friend’s at Portola Coffee Lab – a blend that was specifically selected for this complex, sour coffee ale, and a concept that was nearly a year in the making.

Released to Hoarders and Reserve society members. I did not think much about getting this one at first. Then I saw what it was made with. Essentially, they took their awesome Quadrupel Tonnellerie and Anniversary ale, combined it and added coffee. Ridiculousness! But I say that in an awesome epic way. Both base beers are already exceptional. Therefore, taking this to the next level is definitely what the Bruery does best. Now the question is, should one get this one? Well, that is where we come in to advise you, the reader, whether we think you should give this one a shot. Let’s do this, cheers!

Finishes with rich dark fruits, of blackberries, dulce de leche caramel, toasted coconut, vanilla, clove space, bananas, dark candi sugar, rock candi, blackberry yogurt, toffee, dark chocolate, oak, and pecan pie. No alcohol in the taste, full dark amber body, effervescent, smooth and silky mouthfeel with a sipping drinkability.

Overall:
This is damn insane! This is indeed the best Belgian Sour Quad ever! The Blackberries and Coffee just raise it to those OVERKILL levels. Not in a bad way but of the deep and supremely luscious bliss kind of way. Heck even the fact that the base beers are already above exceptional, this just takes it to that bucket lister level. Definitely find a way to get this one. A lot of awesome stuff in this bottle.

Anime Corner:
Hsien-Ko/Lei Lei and Zabel/Lord Raptor (Midnight Bliss) were used in this pairing to go somewhat with the label but mainly the colors of the dark fruits and flavors of the beer. I have not used Hsien-ko in a beer for the Bruery before so I definitely thought this was the perfect opportunity. Zabel was merely there as you can think of the 2 beer fusion in coffee as represented by Hsien-Ko coming to Zabel from behind.

Weakness Is worn on the sleeves. Boldness Is within the heart. This intensified blend of barrel-aged Double Bastard Ale is all heart baby. The weak will find it to be a telltale heart. It knows of your fallibility. It smells your fear. The heart of this beer disdains you, as it disdains all things homogenized, wimpy and uncultured. You do know the truth of yourself, no? If you hesitated to answer that, if even for a split second, that in and of itself is telling. If you aren’t capable of knowing the reality of yourself, this beer can and will take the responsibility of informing you of what you should already know. (And it you’ve lost your way in this text already and no longer are clear about what I am saying, your reading pace has exceeded your comprehension pace. Go back, slow down and start over, bright eyes.)

Take a deep breath. Let it out slowly. Evenly. Give yourself some positive affirmations. Breathe deep again. There. Feel better? If you followed those instructions, then set this bottle down and back away immediately, you new age poseur. Fight or flight and I’d recommend the latter for you, tiger. Wet paper bags are more your speed.

My love for double bastard never ceased ever since that fateful day where I had the dream I would try it. Since then have had so many variants and now as I get close to making my own version of the delicious Midnight Brunch Double Bastard, Stone/Arrogant Brewing released a wild one from left field. I didn’t think much of it but when I saw it was made with Islay Scotch Whiskey, I definitely thought, this is a must try for sure. Of all the spirit aged beers that I have tried in the past, the Islay Scotch aged is one that is so rare, I last tried a Brew Dog Stout that had this a long time ago. So for stone to release this, this is a truly special occasion indeed and the name fits it perfectly. Cheers for many more from the true Kings of Beer, the Arrogant Bastards!!

No alcohol in the tasted despite the ABV, Crimson clear body, smooth, crisp, refreshing, velvety, creamy and mildy syrupy mouthfeel and a sipping drinkability.

Overall:
A bit above exceptional! This is very damn special. A very unique Bastard indeed. Very different type of smokey goodness that definitely comes from the Islay Scotch. The Double Bastard is there but changed big time by the unique flavors presented in complexity of aging in the special spirit of the Islay Scotch. Definitely not for everyone and as Arrogant Tradition goes, many may or may not like it but if you are a fan, I say you will. Go get this Bastard!

Anime Corner:
Lilith Aensland and the many Darkstalkers characters were used in this pairing as I wanted to go with a movie like theme and keep Lilith as the main character as she has been for the other Double Bastards. She even has somewhat of a director’s uniform. The theme of Doubles with Jedah and Morrigan have been a part of the theme since the original double bastard.

The reason I brought the beer back is simply due to the Halloween themed label and the date ofcourse. However, it also gave me a chance to use Morrigan in some Halloween Attire. Cheers!

Anime Corner:
Morrigan Aensland from Dark Stalkers was used in the original Enjoy By pairings long ago since she stands atop a stone gargoyle representing the Stone brewery. For Halloween and the return of the beer I had this May, I chose her in more of a Halloween theme art pairing. I also wanted to have the Tangerine be represented by Morrigan’s Kimono with the flower like in the original Tangerine release of this brew.

CELLAR NOTES
An already magnificent beer’s mouthwatering recipe of unsweetened chocolate, flaked oats and dark-roasted malts is made even more deliciously complex care of oak barrels that previously nurtured bourbon. These amazing vessels impart oak and coconut-like flavors upfront while accentuating the silky smooth midpalate with oak vanillin notes. The finish is long and intense, with layers of chocolate and oak vanillin. You might be tempted to lick the glass for every last drop of this delectable adult confection.

==Introduction==

It has been a while since I had some of the beers from Stone’s Quingenti Millimitre series and this one I could not pass up. Especially, since it was available in local and online stores. Essentially, they take their 12th Anniversary Bitter Chocolate Oatmeal Stout, which I tried several months back at my friend Richard’s house, and then they age it. The original beer was delicious but the fact that they barrel aged it was something I just thought is amazing. I think almost every beer that I have tried barrel aged is definitely leagues above the original beer. Not always, but it is common for it to happen. Let’s see what this one has to offer, cheers!

Aftertaste:
Finishing with rich oak Bourbon soaked dark fruit chocolate chip raisins oatmeal cookies on whipped cream and earthy and vanilla ice cream. No alcohol in the taste despite the ABV or the oak bourbon notes, pitch black dark full body, smooth, creamy, chewy, and velvety mouthfeel along with a sipping drinkability.

Overall:
An exceptional and supremely delicious liquid chocolate cookie in a bottle. This beer so much cookie goodness that it reminded me of the Velvet Merkin from Firestone Walker. So much smoothness and chocolate, it’ll blow your mind. I almost wish they sold this one on tap and growler fill as 500ml is not enough for this one. Definitely need to try this again but for the price I think it is worth having once. I highly recommend this brew to those that love barrel aged beers and chocolatey goodness.

Anime Corner:
Lei Lei Hsien-Ko from Darkstalkers was used in this pairing because I wanted to use her in a beer. It has been a very long time and I think she fits with this beer as well as a spirit lies in the oak that used to contain a bigger amount of a spirit. By spirit I mean bourbon. There really isn’t much to say other than how the colors can compare to the complex flavors or how sweet and innocent she looks like the sweetness contained in this bottle.

This wee heavy ale aged in bourbon barrels is the second in a chronologically aged series released at six-month intervals to chart the evolution of barrel-aged character over time.

We brewed a wee heavy – known for rich, malt-forward flavors – and set it to age in bourbon barrels. Every six months, we’ll take a quarter of the barrels, blend them and bottle them. This second bottling from our Chronology Series represents the nuances imparted to the base beer after twelve months of barrel aging.

Released to the Reserve and Hoarders, this is the next 6 month release of the Chronology Wee Heavy series. After a whole 12 months of aging, the next brew is released. For being the first time The Bruery releases a Wee Heavy beer and places it in its Chronology series is awesome as the Wee Heavy style is somewhat uncommon. It is a personal favorite of mine. Let’s take look and see how this beer has fared for the last 12 months, Cheers!

Aromas:
Dark fruit prunes, grapes, plums, currants, blackberries, blueberries, Oak, Vanilla, bourbon, dulce de leche caramel, toasted coconut, smoked peat, dark chocolate, milk chocolate, rye bread, bananas, plantains, clove spice, crème brulee, flan, cinnamon, fruit cake, scotch whiskey, toffee, capirotada raisin bread, Almond Joy chocolate and marzipan.

Flavors:
Rich Oak, Vanilla, bourbon, dulce de leche caramel, toasted coconut, marshmallows, chocolate smores, Almond Joy chocolate, marzipan, smoked peat, dark fruit prunes, grapes, plums, currants, blackberries, blueberries, dark chocolate, milk chocolate, rye bread, blueberry cheesecake, Blackberry cobbler, pecan pie, nutmeg, maple, all spice, dates, anise, licorice, molasses, dark cherries, grilled bananas, plantains, clove spice, crème brulee, flan, cinnamon, fruit cake, scotch whiskey, toffee, capirotada raisin bread and port wine.

Aftertaste:
Finishes with richer dark fruits, oak, dates, anise, bourbon, toasted coconut, bananas, caramel, pecan pie, and hazelnut nectar. Slight alcohol in the taste. Dark brown full body, smooth, creamy and chewy mouthfeel and a sipping drinkability.

Overall:
An exceptionally awesome brew. As with many of these Bruery beers, age does wonders. The aging of the wee heavy for another 12 months has given this one a more dark fruit forward flavor along with the vanilla, banana and coconut hints. I definitely want to see more of this one as it develops more in the future and would recommend this one highly to those that love strong Wee Heavys

Anime Corner:
Felicia from Darkstalker/Vampire Saviour was used in this pairing for the reasons that I have not used her in any Bruery beer thus far and is one that is perfect with the colors of the label for the beer. Also the racing part is an analogy for how time speeds by and before you know it, BAM. That and Cats have 9 lives so would time even matter. I figured it was an interesting concept as to why use her in this pairing.

Chupacabra Quinceañera by the Bruery Terreux is a 4.9% ABV American Wild Ale brewed with Brettanomyces.

Commercial Description:
Chupacabra Quinceañera is a refreshing 100% Brett-fermented blonde beer bursting with clean tropical aroma from the unique brett strain used for fermentation. These notes are complemented with the subtle use of Simcoe and Amarillo hops, which add layers of tangerine and passionfruit. It’s quite the party.

==Introduction==

Available to Reserve and Hoarders Society members of the Bruery, this beer was something I wanted to try since last year when it was released in the tap room. An original pilot batch by Sean Flannery which was made using Brettanomyces Bruxellensis Trois which is a strain that give the beer tropical flavors rather than barnyard funk. The name of Chupacabras Quinceañera or the Sweet 15th of the Goat Sucker was made as a tribute to creating a beer with mythical brett strains. In 2013, they made one with another mythical strain and called it Werewolf Barmitzvah. I never did get a chance to try Chupacabra Quinceañera and now that it is here, let’s present her to the site. A wild ale with Brettanomyces but how will it differ from the other Bretty beers. Some with citrus, orange and saison funks or even tropical notes. Let’s take a look at how this one is, cheers!

Aromas:
Citrus, piney, floral and grassy hop notes, biscuit bread, hibiscus flowers, lavender, roses, tropical fruit pineapple, honeydew melon, papaya, passion fruit, dragon fruit, guava, prickly pears, stone fruit peaches, apricot, lemon peel and tangerine gummies.

Flavors:
Lots of tropics and funk, pineapple, honeydew melon, papaya, passion fruit, dragon fruit, guava, prickly pears, citrus, piney, floral and grassy hop notes, peppercorn, farmhouse hay, stone fruit apricot, peaches, tangerine gummies, white raisins, wine grapes, oranges, lime peels, banana notes, clove spice, barnyard funk, vanilla, oak, butterscotch hints, biscuit bread, hibiscus flowers, lavender, roses, lemon grass, basil, Danish cream.

Aftertaste:
Finishes dry with tropical notes, stone fruits, farmhouse hay, citrus, piney and floral hops. No alcohol in the taste, clear golden body, crisp, refreshing, effervescent mouthfeel and easy to drink.

Overall:
A perfect tarty and bretty tropical sour with lots of delicious flavors. Even on the light side, it is flavorful displaying many of the flavors I would love from even Saisons even though it is sour. The use of variant Brett strains gives me ideas for the day I ever make a saison of my own. Tropical flavors are awesome! This one is a definite high recommendation for this that like light crisp sours with lots of bretty and tropical flavors.

Anime Corner:
Lilith Aensland from Darkstalkers was used in this pairing to represent La Chupacabra Quineañera. The reason I chose her is since she is depicted as a younger person, but being a Succubus, she is actually older than she looks. Also since she is a creature of the night, the whole aspect of Chupacabra, or goat sucker, she is a sexual blood sucker. Like her, this beer is very alluring in the flavor profile but do not fall for the tricks as you may meet your doom. Ah who cares, you already started drinking anyway.

==Introduction==

A share from my friend Aaron Mendiola of BeerMetalDude.com, this brew seemed the best one to start the box my friend sent of sweet sweet Texas nectar. Based on what was used for this one and what it’s going for, it does seem like a delicious dessert in a bottle. I think having said this, there hasn’t been an apple pie beer made directly with the intention of tasting like apple pie so definitely is a unique one for sure. Let’s have a look.

Aromas:
Cinnamon, Pecan pie, Apple Pie, vanilla ice cream, honey, graham crackers, ginger bread, ginger spice, fruit cake notes, bananas, clove spice, dark fruit cherry, prunes, raisins, nutmeg and brown sugar.

Flavors:
Delicious Apple pie right off the bat, honey, pecan pie notes, hazelnut, all spice, nutmeg, cinnamon, graham crackers, ginger bread, ginger spice, fruit cake notes, bananas, clove spice, pumpkin spice, stone fruit apricot, marshmallows, vanilla, caramel, toffee, capirotada raisins bread pudding, dark fruit notes of plum, white raisins, cherry and white prunes.

Aftertaste:
Finishes with rich apple pie notes, cinnamon, graham crackers, nutmeg, pumpkin spice, ginger bread, vanilla, honey and bananas. No alcohol in the taste. Honey golden colored hazy body, crisp, smooth and refreshing mouthfeel with an easy to moderate drinkability.

Overall:
Damn exceptional brew. It really does taste like what they were going for, delicious apple pie and honey. I tend to lean towards beers that taste a lot like they said they should taste and as a result, these beers always get the best scores from me. I really like beers that taste like something specific and especially those who are so complex and rich with flavors. This beer proved to be many of those things so I would highly recommend it if you can find it.

Anime Corner:
Wo-Class from Kantai Collection (KanColle) and Q-Bee from Darkstalkers were used to pair with the label of the bees but also the colors of the honey and sweetness that is the beer. The complex colors they represent also represent some of the flavors of the beer like the apples and citrus for example.

For Stone Enjoy By Tangerine IPA, we added the tangy zeal of a mandarin fruit’s juicy nectar. The result…freshness has never tasted as ripe for the picking as this does right now.

==Introduction==

Obtained this one at the local Bevmo. It has been years since I have tried the Enjoy by series as it has been released very frequently. Aside from the Black IPA, this is the first time I have seen another variant of this beer. For the sakes of trying the different one, especially since the original is very delicious, I want to see the differences. Stone has made so many different IPAs and this one is made with the super fresh mind set and it does not disappoint. Now with the tangerines, let’s see how this one will be.

Aromas:
Tangerine peel, Tangerine gummy bears, tropical fruit papaya, mango, honey dew melon, dragon fruit, passion fruit, lychee, pineapple, strawberry, coconut hints, citrus, grapefruit, floral, herbal, grassy, piney, oniony and garlicky hops, lemon peel, biscuit bread, stone fruit peach, apricot, mango, oregano, basil, Italian herbs, mint and honey.

Flavors:
Dank citrus, grapefruit, floral, herbal, grassy, piney, oniony and garlicky hops, Tangerine peel, Tangerine gummy bears, tropical fruit papaya, mango, honey dew melon, dragon fruit, passion fruit, lychee, coconut hints, stone fruit peach, apricot, mango, oregano, basil, Italian herbs, mint, yerba buena, lemon peel, biscuit bread, sweetened condensed milk, honey notes, oranges, caramel, starburst, kumquats, pineapple hints and strawberry.

Aftertaste:
Lots if citrus and tangerine in the aftertaste followed by dank grapefruit, citrus, oniony and piney hops which linger but also the notes of honey and tropical fruits linger as well. No alcohol in the taste, clear honey colored body, silky, crisp, refreshing and smooth mouhfeel and easy to drink despite the ABV.

Overall:
An Exceptional IPA as always but with the Tangerines it definitely adds a mark more of flavor. Nothing to increase it too drastically from an already perfect and exceptional IPA but something that is a little more delicious than the original. Depending on how people like citrus or Tangerines for this matter would determine if they will like this brew. Either way, I think it is definitely worth trying and a high recommend.

Morrigan Aensland from Dark Stalkers was used in the original Enjoy By pairings long ago since she stands atop a stone gargoyle representing the Stone brewery. In this iteration, I wanted to have the Tangerine be represented by Morrigan’s Kimono with the flower. A very different look for a different beer I figure.

Bats help bring many of our everyday foods to the table including rice, coffee, sugar, numerous fruits and nuts, not to mention some of the most important of our Halloween treats.

Bats are out unseen gardeners, with foods from around the world relying on these nocturnal creatures.

I received this special brew from my friend Aaron Mendiola at BeerMetalDude.com. This brew was made for a good cause. Brews like these I feel is a great way for craft beer to give back to the community. Definitely giving back to is a good way to establish once self not by the beer that they sell but by the good they do for society. I feel like the big guys like inBev just mainly spend on selling a product than making good beer and giving back to the community. That is an argument for another time. Anyways, let’s take a look at this delicious Batty brew.

Flavors:
Bananas, agave nectar, lechugilla agave juice, honey, wafflecone, honey comb, tropical fruit papaya, raspberries, dragon fruit, passion fruit hints, grapes, biscuit bread, cane sugar, grassy, herbal and floral hops, hibiscus, candy sugar, peppercorn notes, mezcal hints and green tea,

Aftertaste:
Finishes dry with hints of tropical fruits, floral notes, honey, agave hints, hoppy notes and cereal graininess. No alcohol in the taste, golden light to hazy body, crisp, clean, smooth and refreshing mouthfeel and easy to drink.

Overall:
A very good brew showcasing so many delicious tropical fruit flavors and still remaining crisp, clean and very drink like a nice pilsner. The combination of the fruits are really present despite this being somewhat lightish of a brew. Something people can dig especially if your purchase goes to a good cause. Today bats, tomorrow, purple sea stars and next, save the Whalez!

Anime Corner:
Lilith Aensland from Darkstalkers was used in this pairing since I wanted to pair mainly with the theme of bats and extracting nectar. In this artwork, she is surrounded by flowers just like the bat is on the label. That along with some of the fruits in the beer that present themselves in the various colors of the art piece. This is a very rich nectar.

==Introduction==

Obtained at the Stone Company Store in Pasadena California, this beer along with other awesome beers were released to the public on tap. This one was the only barrel aged serving on tap eligible to take home in growler fill.

Aromas:
Vanilla, bubble gum hints, oak, tequila notes, agave, peppercorns, stone fruit apricots, peaches, flowers like lavender and chamomile, cane sugar, lemon, herbs, farmhouse hay, wine grape notes, banana hints, clove spice and minor tropical fruit hints.

Flavors:
Lechugilla Agave, Cane sugar, Mezcal, Tequila, oak, peppercorns, honey, oranges, herbal, floral, grapefruit, piney and grassy hops, clove spice, ginger spice, coriander spice, vanilla, bubblegum notes, Italian basil, lemon, mango, pineapple, stone fruit apricots, peaches, butterscotch hints, dragon fruit, passion fruit hints, funky notes, farmhouse hay, wine grapes, chardonay hints, mustard seed, bananas, cantaloupe, lavender, hibiscus and tamarind.

Aftertaste:
Finishes with some notes of tequila, peppercorns, stone fruits, grapefruit hops and clove spice. No alcohol in the taste, clear gold body, sipping drinkability, smooth, crisp, refreshing and moderate mouthfeel.

Overall:
A bit above exceptional. The beer originally was already delicious as I really loved the flavors of the Cali-Belgique as they reminded me of a border lining Belgian Pale Ale or Hopped Saison and mainly the Golden ale that was the As Follows by stillwater with its pungent orange and herbal flavors. Now with Tequila, especially reposado tequila give this beer a touch of something that not many beers of this style get to see. A European blend with not just west coast style but also a major Mexican influence. This beer was a great out come. Tequila barrel aged beers are rare and few in between so getting a chance to have one once and a while is an awesome feat since many breweries go with mainly bourbon now a days which also is extremely delicious as well. Each spirit adds something genuine to beers.

Anime Corner:
Jedah Dohma “Midnight Bliss” version from Darkstalkers/Vampire Savior was used in this pairing as with the last time I tried and reviewed the original brew, I used Jedah as well. This time, Jedah fermented in the dark recesses of Reposado tequila barrels represented by the mezcal and agave colors of the picture where she is with the deathly bird (Think of it as the Mexican Tequila influence and the Scythe being the harvester of Agave). I also brought back one of the original pics back too. Jedah for this stone beer represents the fancy tradition of European beers meeting the west coast. Meaning she has like a European Dracula like outfit but also blonde hair represents the aspect of the west coast style in terms of the blonde and clear colors that this beer has.

Project #7 was my take on the famous hoppy Belgian Tripel IPA, La Chouffe Houblon Dobblen IPA tripple but my take was using a variety of other ingredients such as Columbus and Amarillo hops and using Arizona Wild Flower Honey. Yes, the ABV does have a story to tell as my original gravity was supposed to keep things near the 9ish% ABV but instead went to the 11% ABV range. Literally a Triple IPA that is also a Belgian Tripple. What a Trip? Especially considering the name. Waggling and Dancing, don’t fall and “trip”now! Cheers!

This brew was born on National Homebrew Day when I brewed with my friend Richard Stan Avila of Avila Ales, one of my great friends and fellow homebrewer. A great brew in a somewhat of a collaboration as great beers are made with great friends.

Aftertaste:
Lots of sweet caramel, tropical fruit hints, Belgian candy sugar, bananas
Slight booziness in the taste which is covered by honey and malt as it warms up, Golden Honey Amber, light to medium body, smooth crisp, syrup and creamy mouthfeel and a moderate to sipping drinkability.

Overall:
I’m well damn impressed. The fact is, I did not get the carbonation right (Still learning 😦 ) But… the beer itself was well damn amazing. The beer has lots of great flavors reminding me of the La Chouffee Dobblen IPA Tripel but taking it a step further into like a Honey and Barleywinesque territory. The fact that I used Amarillo hops most likely makes the difference in the enhanced excotic fruitiness but either way, this beer is ridiculously delicious and is something I would love to make again.

Anime Corner:
Morrigan Aensland and Q-Bee from Darkstalkers/Vampire Savior were used in this pairing because I wanted to show how the fusion of the honey and hops combine by doing a dance mainly done by bees called waggling. Do bats do the “waggle” too? Maybe, maybe not but both bees and bats are in your face enemies in some 2-D platform games that become annoying. The fact that I found this pic thought was a major tribute to some of my favorite characters to the Darkstalker series but also one of the greatest compliments to the Belgian IPA as Morrigan represents the dark fruits and hoppy goodness while combining with the floral rich honey and sweetened condensed milk and citrus provided by Q-Bee all fusing in a beer that is probably way better than the original Dobblen Trippel IPA from La Chouffe. Although I can only hope.

Thankfully, that is no longer the case. Terms such as “lupulin” and “IBU” are well established in the craft beer lexicon. And with the knowledge of all that hops have to offer comes the desire to go beyond bracing bitterness. Fortunately, Stone Ruination IPA has always been crafted to celebrate all facets of the hop—its beauty and poetry, its boldness and might. As craft beer has evolved, so too have techniques for extracting the best and the most out of hops. So we modernized Stone Ruination IPA, coaxing every last drop of piney, citrusy, tropical essence from the Centennial, Citra, Simcoe and Azacca hops that give this beer its incredible character. Join us in cheering this, the second stanza in our “Liquid Poem to the Glory of the Hop.”

==Introduction==

An update to the Golden Standard of IPAs. I haven’t reviewed the original Ruination in years and now they went ahead and upgraded to a more “hop” modern type of double IPA. A more tropical rounded updated based on the Citra and Simcoe used in this beer. Ruination was and most likely still is one of the best Golden Standards, but now that the recipe is different, can it stand up not only to the it’s own standards but the best IPAs in the world of today? Only a few sips and taking notes will tell the truth. Follow me as we investigate. Cheers!

Aromas:
Tropical aromas like mango, citrus, kiwi, papaya, pineapple, guava, strawberry hints, caramel, orange peel, herbal, citrus, grapefruit, Piney, grassy, herbal, oniony, blue basil, garlicky dank and earthy hops, orange zest, lemon drops, lychee, biscuit bread and kumquats.

Flavors:
Herbal, Citrus, grapefruit, Piney, grassy, herbal, oniony, blue basil, garlicky dank and earthy hops, hop oils, passion fruit, tropical fruit like kiwi, mango hint, dragon fruit, papaya, pineapple, guava, strawberry hints, caramel, biscuit bread, vanilla, stone fruit peach, apricot, toffee hints, orange zest, lemon drops, lychee, kumquats and honey dew melon.

Aftertaste:
Citrus, Piney, grassy, herbal, grape fruit, tropical, dank, oniony, garlicky and spicy hops linger along with caramel and vanilla hints finishing with some tropical hop burn vs. herbal of the original.
No alcohol in the taste, clear gold body, crisp, refreshing moderate, easy to drink despite the ABV unless you are not used to palate wrecking IPAs then definitely a sipper for you.

Overall:
Still a perfect beer as before but this time really balancing the tropical elements of the hops which was not previously there in the original. The update version may not please the pure herbal and grassy enthusiast/hope head but instead introduces a side of the ruination hop burn that it could not do before from the original recipe. I am going to miss the older recipe even though I love more tropical IPAs but this is still very well made and still a good representative of the golden standard that West Coast IPAs are known for.

Anime Corner:
Zabel/Lord Raptor from Darkstalkers/Vampire Saviour was used in this pairing since I used her in the original Ruination. Back then, Ruination not only stood for the palate wrecking machine but also ruining the someones character with different aspects, such as smoking or any other inhibitor that may be deemed a ruin in societies eyes. Not to say beer in general is the ruination but the way society sees the ruination of some people with substance abuse is the ruination that your palate sees. Unless you have a tolerant palate like mine, then let people do what they want and screw societies idea of what is normal. Whether it be their idea of how people should be or what people should drink (craft vs. macro). Live your life as you please!

Me So Honey by Belching Beaver

Me So Honey by Belching Beaver is a 5.5% Blonde Ale brewed with Honey.

Me So Honey. This Ale brewed with honey is an easy drinking anytime beer. Brewed with local wildflower honey, Me So Honey is smooth on the palate showing its wheat character up front with hints of flower and fruit on a clean, refreshing finish.

==Introduction==

Just in time for spring, although this is a year-round beer, I wanted to bring this forth this time around as I have not reviewed the beer here on the site in the past. The first time I tried this beer was when I was on my way to San Diego and stopped by Belching Beaver brewing. They had awesome beers like my favorite, the peanut butter milk stout, the horchata milk stout and their new one, coconut milk stout which I hope will one day be released to the public in bottles or even growlers. When I first tried it, I was amazed. They really got the rich honey flavors to pop and so when I saw it at the store, I said, screw it, I am bringing it to the site. So let’s take a close look at the bee knees here. Cheers!

Aromas:
Rich honey, biscuit bread, vanilla, floral and grassy hops, cream of what, coriander spice, caramel hints, graham crackers, hazelnut hints, citrus, oranges, stone fruit peach hints, cereal grains, wheat bread, orange peel and cane sugar hints.

Flavors:
Lots of rich honey flavors, vanilla, biscuit bread, floral notes, coriander spices, caramel notes, creamy of wheat, orange peel, pie crust, flan hints, hazelnut nectar hints, graham crackers, grassy and floral hops, stone fruit peach and apricot hints and very mild tropical notes.

Aftertaste:
Rich Honey lingers along with graham cracker notes, floral notes, vanilla, caramel hints and stone fruit hints. No alcohol in the taste, crisp, refreshing and smooth mouthfeel, very drinkable and light to hazy gold body.

Overall:
A very good ale with rich honey notes. Needless to say, it is not the best honey beer as I give that to the Belgian beer Bieken which I had long ago. However, it is the best specific honey flavored ale that is the most drinkable and was the riches specifically with honey. For that, I think it is very awesome and definitely would recommend the seek. It is not overwhelming and is very pleasing to many palates.

Q-Bee from Darkstalkers/Vampire Savior was used in this pairing to go with the name of the beer and flavors that come with being a sexy honey bee! She is very sexy and the way she looks at the viewer with the honey is very seductive and suggests that she really wants that honey and more! What a perfect and honey sweet pairing we have here.

Haven’t tried this beer in ages. Mainly since it was coming out so frequently I always tried to pass it up for other beers. I guess I decided screw it, I am doing another review of this one. Each release is the same I would think but the idea is to drink this one as fresh as possible without sacrificing the hop head theology of as fresh as possible. While me personally, I could care less about what hop heads think of freshness, but even a moderately fresh one, I will give it a round to see what flavors I can get from this. I think even at 9.4% ABV, freshness would get thrown out the window, but that is none of my business. Now let’s drink some of this tea. Cheers!

Aromas:
Citrus, grapefruit, floral, herbal, piney and grassy hops, Rich tropical fruits like mango, dragon fruit, papaya, guava, passion fruit, lychee, honey dew melon,blue basil, oregano, lemon peel, garlicky, oniony, dankness, stone fruit peaches, apricots, plums, honey dew melon, tangerines, oranges, hints of sweetened condensed milk and milk coconut.

Flavors:
Rich hop flavors or citrus, grapefruit, floral, herbal, piney and grassy hops, biscuit bread, lemon peel, tangerine, oranges, caramel hints, super dank oniony and garlicky notes, oregano, basil, Italian herbs, Rich tropical fruits like papaya, mango, honey dew melon, dragon fruit, passion fruit, lychee, coconut hints, stone fruit apricots, peaches, plums, sweetened condensed milk and honey.

Aftertaste:
Sweet tropical notes, honey, herbs, citrus and grapefruit hops, dank oniony and garlic notes linger
No alcohol in the taste, easy to drink despite the ABV, clear body, silky mouthfeel, crisp and refreshing.

Overall:
In comparison to when I had this over 2 years ago, they really perfected the freshness in this beer. This is super well balanced giving those tropical fruits I really love along with the hoppy, herbal and dank notes. So as to coming close to what I would think would be some of the best IPAs in the world like Pliny the Elder, Heady Topper and the new Power Plant, I would like to say, YES!! Ofcourse it is a player in the best IPAs. It is closer to Pliny in the herbal hoppy department but since it is balanced with tropical notes, It comes close to Power Plant too. Either way, maybe there is a reason they tell you to drink it fresh. Either way, great beer and a must have. Don’t worry, if you miss this one, they release it almost year round.

Anime Corner:
Morrigan Aensland from Dark Stalkers was used in this pairing long ago since she stands atop a stone gargoyle representing the Stone brewery. Her hair colors pair well with the label and those melons, I mean…. umm colors of the artwork represent the herbal and tropical complexities of of the beer flavors. Yes this beer is damn sexy and taste great!

2014 Old Numbskull by Alesmith brewing

2014 Old Numbskull by Alesmith brewing is an 11% ABV World Class Barleywine.

Label:
Caramel and toffee notes abound in this deep copper-colored American Barleywine Style Ale alongside toasted mail and a hint of ripe dark fruits. Old Numbskull showcases malt sweetness, intense American hops, and an aggressive bitterness. Extremely well-balanced, the full-bodied mouthfeel and assertive hop profile leads into a deceptively smooth finish. Old Numbskull can be laid down for years to come.

This barleywine ale absolutely loves food. Its Rich sweetness pairs particularly well with roasted meats, braises, and stews or a bold, decadent such as sausages, pate, and a variety of pungent cheeses.

Another Alemisth I had yet to review. I was able to get this one as it is in the season for the offering at Ramirez Liquor in Los Angeles California. You can also find this one wherever they sell Alesmith beers. It is a common beer around here and yet, this is the first time I have it.

Aromas:
Toffee, caramel, piney, earthy, herbal and grapefruit hops, raisins, figs, brown sugar, butterscotch, old mangoes, apples, stone fruit, biscuit bread, cinnamon, hints of oak, old oranges.

Flavors:
Earthy, piney and grapefruit hops, rich caramel, pecan pie, rich toffee, biscuit bread, apples, dried apricot, tangerine marmalade on rye bread, cherries, cinnamon, mango, oak hints, papaya, coriander spice and honey.

Aftertaste:
Close to dry but some caramel, toffee, rye, earthy and piney hopes with a bit of grapefruit. No alcohol in the taste, smooth yet a sipping beer. That is the dangerous part because at 11% ABV, you just wanna keep going. Take it easy though.

Overall:
Definitely exceed expectations quite a bit. A mix of an English Barleywine clashing with the American styles to create, well, a Numbskull. That’s what happens when you class these 2 beers together. There this aspect about this beer that invites you to feel the hops but nothing that overwhelms as it slowly eases you into the zone of sweet caramel dessert beer goodness. A good amount of hops but nothing overwhelming and just sits right. It is not as awesome as the Grand Cru or the Old Ale but this is one of those Barleywines that just sits very well. Highly recommended for sure.

Anime Corner:
Original fly girl artwork and Jedah from Darkstalkers was used in this pairing mainly for the numbskull name and the label colors. The numbskull aspect as you may tell, has to do with the little skull on he fly girl’s head as well as the Jedah looking like she forgot something or something is not quite right. Also the fact that the fly girl is drinking a wine and well as the description says, old numbskull loves food, then it very well fits as all flies love food and love sugar and well, this beer is so good that even some of the flies want some too. Evil flies though >.>. So watch out

2013 Quingenti series Batch no. 8 Crime by Stone brewing

2013 Quingenti series Batch no. 8 Crime by Stone brewing is a 9.6% ABV Chile beer which consist of Lukcy Bastard ale brewed with chile peppers and aged in bourbon barrels

On Arrogant Bastard Ales 13th birthday we threw all our bastards together—Arrogant Bastard Ale, OAKED Arrogant Bastard Ale and Double Bastard Ale—to create Lukcy Bastard Ale. Later, a crime was committed against this gorgeous beer by adding an absurd amount of freshly harvested local 
peppers, including mid-level-heat red and green jalapeños and ultra hot black nagas. Caribbean red hots, Moruga scorpions and fatalis, and thus Crime was born.

I love spicy food more than the next guy. I would even try some of the hottest stuff, but damn, I wasn’t sure if I was up to the Arrogant Lukcy Bastard challenge. Especially one that is made with chile peppers. Considered the second hottest beer in the world, or so I have heard, don’t quote me on it. I am not sure how to approach this but I will do my best 

Aromas:
Rich chiles like my dad makes, fresh red and green japalapeño and piquin peppers, flowery notes, hints of caramel, hints of bourbon but hidden, oak, caramel, spices, grapefruit, vanilla and earthy hop notes

Flavors:
Caramel, bourbon, Pizza crust, flowers, very rich and hot pepper spice but the peppers are still distinct. Earthy hops, grapefruit, vanilla, oak, flowers and spices.

Aftertaste:
It keeps burning a but the flowery, peppery and fruit chiles are still distinct as well as some earthy hops, caramel spice, and oak lingers a bit. A strong Sipping beer, no alcohol, but still burns. Very careful with this one PLEASE

Overall:
It is a good beer, but damn it is pretty hot. This would be perfect with a nice steak or chicken. The arrogant bastard taken to heights of new arrogance. Truly doth deserveth thy saying: “You’re not worthy!!” Many people will not like this unless you love beer and really hot chiles. This one is a little more tame and sweeter. I am sure the punishment will be my doom. By the way, this numbs the tongue and you will eventually lose the flavor. This is more of a novelty item. I would highly suggest not getting this beer unless you really love beer and chile, otherwise, you will not like it. This would probably be good for cooking too . But that is it. 

Anime Corner:
Lilith and Morrigan Aensland were used in this pairing because I have used them in some Arrogant bastard beers. Lilith steals the spotlight here because I used her in the lukcy bastard pairing before. The addition of Morrigan in the picture as well as Lilith having her mouth open can represent the “hot and heat” of the beer. Them sitting there almost looks like the home of a crime syndicate hence the name of the beer. The one where Lilith is sitting down represents the beer aging and the last one where it seems there are flowers below Lilith are the chiles that were added to this beer. Awesome stuff.

Recently releases in many markets. You can get this one online but if you live in California, it may come out soon as clown shoes beers are becoming more famous here. I was able to get this one online though. Clown shoes has many series. This one is the next follow up to the Chocolate Sombrero and Luchador en Fuego

Aromas are of ginger, chocolate abuelita hot chocolate, caramel, vanilla, chai tea, non spicy curry, dark chocolate, cinnamon, cardamom, bakers chocolate and molasses

Flavors are of Bakers chocolate, caramel, vanilla, roasted malts, mocha, chait tea, hints of curry but nothing overwhelming, cinnamon, chocolate abuelita, molasses and brown sugar

The aftertaste leaves with minor spiciness, hints chocolate, vanilla, mocha and roasty notes. A moderate to sipping drinkability beer with alcohol well hidden. Pretty balanced and nothing too overwhelming

Overall it is a very good beer in it’s own unique way. While I started to taste some of the spices from Chocolate sombrero, it turned the other way around. In good way of course. It it is nothing overwhelming like the other Curry beers I have had like Indra Kunindra or the coconut curry from New Belgium. It definitely has its spices under control. I think it is not a full flavor bashing beer but the offering of variety of these flavors and balance is well hit. Very solid beer and yes, worth the try for damn sure. Especially since you cannot feel the 10% ABV. If this was Barrel Aged, well it would definitely heighten this to a new level of Rock Stardom!!

Oatmeal Yeti by Great Divide Brewing

Oatmeal Yeti by Great Divide Brewing a 9.5% ABV Imperial Stout brewed with roasted oats and raisins

Label: 
Much like its legendary predecessors, this Yeti is big, bold and dark. The addition of rolled oats softens Yeti’s notoriously roasty backbone and the small amount of raisins added in the brew kettle create a unique dark fruit character. Just as admired as those that came before it, Oatmeal Yeti Imperial Stout is a softer beast.

I have reviewed a couple versions of the yeti. The first one was the chocolate oak yeti which I thought was delicious. Then came the Belgian Yeti and that one was more phenomenal. The oatmeal yeti is this year’s (2013) new yeti release

Aromas are of sweet, dark, and bakers chocolate, mild espresso notes, more mocha, dark fruits like raisins, figs, pecans, caramel, rich chocolate cake, brownies, smokey notes, brown sugar and slight marshmallows.

Flavors are of graham crackers, marshmallows, sweet, milk and dark chocolate, raisin bread pudding, pecans, hazelnut, almond joy, caramel, light espresso notes, oatmeal raisin cookies with chocolate chips, almost a vanilla hint, light smokey and oak notes, figs, chocolate raisin, currants, toasted coconut

The after taste is sweet, dark fruity, bready and chocolatey. The beer is kind of syrupy and velvety like some of the best Stouts I have ever tried. A sipper but not very aggressive to it is moderately drinkable and not so bitter. This is the stuff for certain. 

Overall an awesomely perfect yeti with added flavors that work very well giving another silky layer to an already awesomely complex imperial stout. The Yetis are probably a golden standard of prime imperial stout examples (Basic one’s ofcourse, as Barrel Aged or Belgian Imperial Stouts are in a league of their own). Definitely try this, without a shadow of a doubt, this is a must get unless you find the chocolate aged one or the Belgian one. These are all great. Careful drinking this one, it is kind of addicting and you may end up finishing the bottle.

Dulcis Succubus by Le Trou Du Diable

Dulcis Succubus by Le Trou Du Diable of Canada is a 7% ABV Saison/Wild Farmhouse Ale aged in Wine Barrels

Label: 
The beer is fermented with wild yeast and aged for six months in French oak barrels that previously held botrytized California white wine, creating a complex aroma of honey, vanilla, apricot and leather. The abundant flavor is bittersweet with notes of peach and American hops. Carpe fermentum!

Translated as Sweet Succubus by The Devil’s Hole Brewing is a beer that was not easy to find. Had to place myself on a waiting list. I guess people do seek this one. Right now, Klwines.com has this one for a hefty price, however, if you love sours and saisons or even wine, this might be up your alley. Carpe fermentum!? = Seize the beer 

Aromas of funky funky bready yeast with wine and grape must fragrances came out of the bottle. Other notes I gathered were of vanilla, peach, oak, good fancy cheese, earthy and floral hops, pepper corn, honey, apple, pineapple and cider.

The flavors a lot like that of the Jolly Pumpkin but mainly like the Saisons from Fantome in Belgium. Flavors are of Honey, biscuits, lemon peel, white wine, vanilla oak, peach, apricot, wine grapes, dessert wine, floral and earthy hops, spices like coriander, peppercorns, lemons, leather, apples, biscuit bread and some nice fancy cheese.

Leaves like a nice fancy cheese aftertaste. Not bad at all. We are dealing with “living” brettanomyces in the beer afterall. Love these living ales. The sourness does not come in as strong. There is a good amount of funkyness and some sourness to make it appealing but also giving way to sweeter flavor with some hop bitterness. Overall it is really funky and reminiscent of those great saisons from Stillwater and Fantome. Hell even some of the Stone aged beers might be similar. Awesome stuff. I would think that this would fit the bill as a during dinner or after dinner type of beer. Wine aged beers seem that way

It has been ages since I first had this beer. Back then when I bought it in 2011, I was fairly new to beer reviews and such. It has been almost exactly 2 years since my last review so I decided to get this one to give it another go.

Aromas of this beer are of honey, white grapes, biscuit bread, flowers, peach, pear, champagne, apples, very slight estery banana cloves, slight pilsner sugars and peppercorn. The flavors are white grapes, pears, apples, apple cider, champagne, lots of honey sweetness, pilsner sugars, pomegranite, slight cloves, slight coriander, slight peppercorn, flowers, vanilla and biscuit bread. To be honest, this is closer to a dessert white wine. It is fantastic and delicious, yet the pilsnery effect makes it where it is reminicent of a lager but very very nice and amped. First of all, for being 10%ABV, there is no sense of alcohol and because of it’s drinkability, it would taste awesome to anyone who is not really into craft beer. This is a magnificent beer and one I would introduce to people who are new into craft beers. Definitely a recommend for many to try. Just be careful since at 10%ABV, the beer is so good, one could easily finish it the bottle

 

2011 Review:
A rare piece of beer here. Smells of fruit and honey. The bitterness and alcohol are very masked by the honey and grape sweetness. Some what of a earthy after taste, Highly recommended if found . The beer itself has a history(Beeradvocate.com) “Inspired by a beverage found in clay posts in China around 9000 years ago. In keeping with historic evidence, Dogfish brewers used pre-gelatinized rice flakes, Wildflower honey, Muscat grapes, barley malt, hawthorn fruit, and Chrysanthemum flowers. The rice and barley malt were added together to make the mash for starch conversion and degradation. The resulting sweet wort was then run into the kettle. The honey, grapes, Hawthorn fruit, and Chrysanthemum flowers were then added. The entire mixture was boiled for 45 minutes, and then cooled. The resulting sweet liquid was pitched with a fresh culture of Sake yeast and allowed to ferment a month before the transfer into a chilled secondary tank.”

Stone Cali-Belgique India Pale is 6.9%ABV Belgian India Pale Ale.

Label: 
The name “Stone Cali-Belgique IPA” both begs a question, and answers it at the same time. It begs the “what exactly is that?” question, and then answers it: “Stone” designates this ale as one brewed by the Stone Brewing Co., “Cali” hints that it is a California-style IPA (which all of our IPAs are, as Stone is certainly one of the best known progenitors of the West Coast IPA style), and finally, it has an undeniable Belgian influence, indicated by the word “Belgique” (which is how Belgium’s French-speaking population say the word “Belgian”…the Dutch-speaking Belgians say “België”*). “IPA” of course stands for “India Pale Ale”—but this label is not the time nor place to delve into that storied history. Of course, there is the implicitly posed and as yet unanswered question of what exactly the Belgian/Belgique/België influence is. And “yeast” is the answer. We carefully selected a Belgian yeast strain that illuminates a fascinating new aspect of the ale that is otherwise ostensibly and simply Stone IPA. This is a yeast that showcases Stone IPA from a completely different angle. The result is both completely new and different, while still being altogether recognizable as a Stone brew, an IPA, and Stone IPA in particular. Think of it as an otherwise identical twin to Stone IPA that was raised in a Belgian culture. Literally.

Now, all grown up and standing next to each other, they look the same…yet different. We’d say the Belgian one sounds a bit funny when it talks, but yeast and ale being decidedly non-verbal (except through you), that’s not literally the case. Their aromas have some similarities, but the Stone Cali-Belgique IPA is decidedly a bit more, shall we say, aromatically funky. (No, we are not saying that Belgians smell funny…we didn’t say or imply that at all in any way…no angry cards or letters please…really, some of you people simply have too much time on your hands!) All in all, we find it all quite fascinating. But we’re brewers, and that’s the way we think. You might find it merely delicious. We, as brewers, most certainly do too, actually. And so…C’est avec le grand plaisir que nous le présentons vous! / Het is met geweldig genoegen dat wij het naar u voorstellen!

* Even though yeast cells are non-verbal, and arguably have no firm affiliation that shows preference for either the Flemish or the Walloons, we don’t want to accidentally misrepresent the little buggers. As such, approximately 50% of the Stone Cali-Belgian IPA bottles are labeled “Cali-Belgique” and the other half “Cali-België.” We at the Stone Brewing Co. respect both cultures highly and equally.

The last time I tried this beer was at a Bev and more tasting special in 2011. I thought it was awesome but I really haven’t had a chance to grab it and sit down with it. When I went to the Stone Company Store in Pasadena California I decided to grab a glass. I was very surprised because this reminded me so much of the As Follows Eschatological Ale by Stillwater Artisanal. The aromas of this beer are simple amazing. Strong Belgian sweet and honey bread fragrance with a lot of herbs, spices, peppercorns, minor grassy, piney and grapefruit hops some tropical fruit like pineapple and mango as well as oranges, cloves, and lemon. The flavors are of nice herbs, honey, pepercorns, cloves, coriander, Italian basil spice, bubblegum, orange, lemon, mango, pineapple, apricots, honey, french bread, some slight grape sourness, grapefruit, slight grassy and piney hops but mainly herbal and floral notes.This one is almost like the Saison du Buff too. The flavors are better on tap. Hence the reason I got a growler of this to go. Better as fresh as possible, but even if not, the Belgian side takes over to address even more complexity. So choose wisely 😛
