Share This is a series of beer that spotlights unique ingredients and important causes. This rich mole-inspired imperial stout collaboration with Chef Anne Conness supports the work of Free Wheelchair Mission in Mexico.

Released to the public as the second beer for charity from the “Share This” series. This time they obtained inspiration from Mexican cuisine, the awesome dish of Molé. The last time the Bruery made an awesome Molé beer was when they made the Smoking Wood variant which was a tap only release. It was definitely awesome and one I would love to review one day if it is re-released. This series is definitely awesome as it does donate a dollar for every bottle sold to the cause of the Free Wheelchair Mission. Yes, it is not much money but this is a microbrewery after all. It’s good to see breweries who do more not just for communities but for causes that really help people. Let’s see how this one is, cheers!

Aromas:
Dark fruit raisins, prunes, cherries, raspberries, capirotada Mexican bread pudding, vanilla, flan, crème brulee, dulce de leche cajeta/caramel, Pan Dulce, chipotle, guajillo, ancho chiles, cinnamon, nutmeg, rich chocolate abuelita, Kahlua liquer notes, dark chocolate, milk chocolate, Bakers chocolate, Belgian Chocolate, German Chocolate, piloncillo sugar cone, grilled bananas, anise, coffee and brown sugar.

Flavors:
Super rich chocolate abuelita, Kahlua liquer notes, dark chocolate, milk chocolate, Bakers chocolate, Belgian Chocolate, German Chocolate, piloncillo sugar cone, grilled bananas, chipotle, guajillo, ancho chiles, cinnamon, nutmeg, dark fruit raisins, prunes, cherries, raspberries, capirotada Mexican bread pudding, vanilla, flan, crème brulee, dulce de leche cajeta/caramel, Pan Dulce, apple pie, hazelnut nectar, pecan pie, Danish cream cookies, marshmallow smores, graham crackers, burnt candi sugar, waffle cone, molé spices, champurrado, molasses, anise, 3 leche/ 3 Milks cake, coffee cake, mocha, java, steamed milk and Mazapan.

Aftertaste:
Finishes with rich notes of chocolate abuelita, dark chocolate, coffee, cinnamon, peppery hints, dark fruits, marshmallows, flan, earthy notes and champurrado. No alcohol in the taste despite the ABV, dark body, creamy, velvety, silky, syrupy, chewy and viscous mouthfeel and a sipping drinkability.

Overall:
An exceptional breaking brew. Easily, a new favorite Molé, or in this case, the best Molé beer I have ever had that was more about Molé, not Mexican chocolate, as that is another story best told in a previous review. For a Molé beer though, this is damn insane and delicious. Definitely a step above some of the other Molé beers I have tried in the past. The chocolate and spices are there but not overly spicy and sweetness is not overwhelming either. Everything just comes together very well and complex. Definitely a highly recommended brew.

Anime Corner:
Sombra from Overwatch was used in this series not necessarily for the label colors but for the use of a Mexican anime/video game character. Sombra, or Shadow is a hacker who uses her skills to manipulate the corrupted systems of power for the greater good. While her colors and ethnicity go well with the flavors of the brew (like dark fruits) and the culture of the cuisine, the “doing something for a good cause” is what I liked about this pairing as this beer is all for a good cause.

==Introduction==

I obtained this mead at www.craftshack.com. New Holland’s Dragon’s Milk, its variants and the bourbon have been one of my most favorites for a very long time. They recently have been showing up here in California and the brew is such a great one that I even tried to make a clone with raspberries and tropical fruits. I even made a special oak aged stout using their bourbon. So when I saw this one, I had to get it. Being a big fan, it was something I could not pass up even if it seemed, well, pricey. You will be paying above 20$ for this little bottle but seeing as I have yet to have anything bad from B. Nektar, and it is Dragon’s Milk aged, I had to get it. So let’s see if this this mead actually worth the money. Cheers!

Aromas:
Rich Wild flower honey, very rich dark cherries, plums, currants, cranberries, blackberries, dark cherry yogurt, Dark Chocolate, vanilla, oak, dulce de leche caramel, Chile spices, tamarind, hibiscus, lavender, Rye bread, raspberry preserves, wine grapes, agave nectar, pecan pie, Stone fruit apricots, peaches, mango, and tropical fruits like kiwis, strawberries, dragon fruit, passion fruit and guava.

Flavors:
Dark Chocolate, Chipotle, Ancho, Guajillo and Roasted Chile de arbol hints, cinnamon, milk chocolate, cherry cordials, dark fruit prunes, raisins, very rich dark cherries, plums, dark cherry yogurt, port wine, oak, vanilla, dulce de leche caramel hints, flan, honey, wild flower honey, maple, agave nectar, ambrosia, tropical notes of pineapple, honey dew melon, kiwis, strawberries, dragon fruit, passion fruit notes, prickly pear tunas, currants, cranberries, blackberries, Stone fruit apricots, peaches, mango, sour apples, golden apples, chamoy hints, tamarind, hibiscus, lavender, Rye bread, raspberry preserves, guava notes, bourbon notes, brandy notes, rum notes, Chambord raspberry liqueur and coffee cake.

Aftertaste:
Finishes with a mild peppery heat that is quelled by the deep dark cherry, complex dark fruits, chocolate, honey, apples, stone fruits, flan, port wine and dulce de leche hints. No alcohol in the taste, crazily enough even though this is 14% ABV, Crimson and Garnet Dark yet clear body when shined upon. Silky, smooth, syrupy, velvety, creamy and rich mouthfeel with a sipping drinkability.

Overall:
Frankly, the best mead I have ever had in my life! The stuff that rare legends are made of I love how the notes of Dragon’s Milk soaked Oak from the barrel is slightly there but mainly the rest of the flavors come together so damn well. The heat is there but minor in comparison to the overall flavors. This mead is very complex in flavors for sure. For 14% ABV, you can’t tell the alcohol is there. Something like this I feel was definitely worth the cash. I had no idea mead could be so good that now I would like to make my own just like I did with my take on Dragon’s Milk. If you can get this one, you should. A very different and delicious experience. I even got a piece from Final Fantasy that best fits the experience even more with the telling of legends and dragons. Highly recommended.


Anime Corner:
Midna from The Legend of Zelda Twilight Princess of Nintendo was used in this pairing since her appearance somewhat resembles that of dragons. She has the colors of the dragon scales and her hair flows like that of the dragon’s fire while her ominous stare is seducing like the eyes of a Dragon mesmerize its prey. Just like this mead mesmerizes the tastebuds. She seems very mysterious and dark but is actually very kind especially when she helps Link in his Journey. While I have used Sierra from Legend of Mana for the Dragon’s Milk stout, the mead would be paired with someone else and that someone was Midna. Definitely the best choice in my mind.

2015 Lips of Faith Series Cocoa Molé by New Belgium is a 9% ABV Spiced Chocolate Porter brewed with Ancho, Guajillo and chipotle peppers.

Say Hola to a spiced up ale full of cocoa and ancho, guajillo, chipotle peppers. But don’t fear the heat, because plenty of caramel and chocolate malts bring a smooth, complex flavor to our Cocoa Molé. Scents of cinnamon when poured will have you saying, “¡Olé for molé!”

==Introduction==

Back in 2012, this beer made a big scene. So much so, that people who tried the beer wanted to bring it back for another go, including me. This beer had me reminiscing of champurrado (maize flour drink), which I was definitely blown away by. In terms of chile beers, it was the second chile beer I had ever had next to the Dogfish Head Theobroma. I really liked that one but this one was more toward a mole chocolate beer and I remember it was something I definitely wanted to try again. Thanks to New Belgum, it is back! Let us see if it still stands with its 2012 companion.

Aromas:
Champurrado, Cinnamon, Chocolate Abuelita, brown sugar, cane sugar, piloncillo sugar cone, ancho, guajillo, chipotle pepper spices, dulce de leche caramel, vanilla, cinnamon, Pan Dulce, apple pie, hazelnut nectar, pecan pie, Danish cream cookies, marshmallow smores, flan, jericalla Mexican custard, molé spices, dark fruit raisins, capirotada raisin bread pudding, Burnt sugar and candi sugar.

Flavors:
Chocolate Abuelita, dark chocolate, milk chocolate, Piloncillo sugar cone, ancho, guajillo, chipotle pepper spices, dulce de leche caramel, vanilla, cinnamon, flan, jericalla Mexican custard, molé spices, dark fruit raisins, capirotada raisin bread pudding, champurrado hot drink, Pan Dulce, apple pie, hazelnut nectar, pecan pie, Danish cream cookies, marshmallow smores, graham crackers, waffle cone, banana notes, clove spice, Burnt sugar and candi sugar.

Aftertaste:
Lots of cinnamon, chile spices, chocolate abuelita, dark fruit, earthy notes and hints of flan linger for a little bit. No alcohol in the taste, creamy and smooth mouthfeel, dark crimson medium body and a sipping drinkability.

Overall:
Perfect example of a Molé beer. I loved this one back in 2012, I love this one 3 years later.
The heat is only slightly there but enough to say it is a spiced chile beer. I really hope this one is here to stay in the Lips of Faith line up because it is one of my favorites. They might distribute this regularly but only one can hope. I highly recommend it if you like spiced chile beer but with the heat burned out immediately but sweet chocolate desserts.

Anime Corner:
May from Backstreet Billiards was used in this pairing since I used her in the previous pairing with 2012 Cocoa Molé. She represents the beer in the sense that it is about Mexican heritage and the indigenous ways which brings the culture and food into what is this beer. The flavors, the label and the art all complement each other.

Smoked Porter with Chipotle Peppers by Stone brewing

Smoked Porter with Chipotle Peppers by Stone brewing is a 5.9% ABV American Porter with Chipotle Peppers.

Sometimes, developing a prodigious new beer is as simple as looking at an existing, already reliably delicious brew from a different angle. After all, as they say, variety is the spice of life. In 2006, Chris Carroll, a long time member of Team Stone, took an adage literally, proposing that we produce a one-off version of our venerable Stone Smoked Porter made spicy from the addition of chipotle peppers. We gave it a shot and found that those smoked jalapeños melded quite naturally with the smoldery peat-smoked malt that gives the beer its flavor and moniker, creating a deep, roasty quaff with a carefully restrained tingle of tasteful capsaicin heat in the finish, They marriage of ingredients was so nice that it has become an annual summertime staple, released each May in honor of Carroll’s initial idea that Stone Smoked Porter w/ Chipotle Peppers server as an artisanal alternative to the industrialized adjunct-laden cerveza billed as the perfect fluid accompaniment to the sunny season. Fizzy, yellow, watery lager abomination of smokey, robust craft beer–we think the choice is obvious . Cheers to variety and a quality alternative to mediocrity.

This the latest release from Stone brewing for the 2014 Summer season. This is the second time I try this beer as well as the second time I got at it for a review. The previous edition of this installment was a 12 ounce bottle. I hope that this version of the beer is just as awesome as the previous as I love chile beers. While the last one was not really hot but the chipotle is present as the pepper is smoked itself. This ones out now so you can get this one in many places they sell Stone. Cheers!

Aromas:
Roasted coffee, dark chocolate, smoked peat, campfire smoke, chile spices, brown sugar, mole sauce, molasses, smoked meat, chipotle, charred oak and caramel.

Flavors:
Camp fire smoke peat, dark chocolate, roasted coffee, a good amount of chipotle chile pepper spice, molasses, hints of mole sauce, earthy hop character, toffee, BBQ, vanilla, roasted coffee, brown sugar and chipotle chile spices.

Aftertaste:
Lingering heat in the finish but not drastic, just pleasing, earthy notes, smokey notes, chipotle spices and some vanilla. No alcohol in the taste, moderately sipping beer with full mouth feel.

Overall:
Very good beer. In comparison the the one I had before, the chile is a bit spicier lingering in the finish but still not super hot. It may not repel those that do not like chile beers but then again I do enjoy very hot food at times. If it has more heat maybe it is because it is fresher. Time may help clearing up the heat. I think this is worth a try if you want to try a very good chile beer. Especially if you like smoked chiles.

Anime Corner:
What a perfect way to pair this beer than to use Pakura from Naruto, the scorch ninja. She is the best beer pairing for this beer as well as for when I first reviewed this beer long ago. Like a ninja attacks when you don’t even know it, this beer is quite a scorcher in the finish. You will first feel all the smoke first and then the chile will linger. That is how Pakura attacks, drying and scorching the palate making you want water but it won’t help at all! Anyways, while this beer isn’t the ultimate scorcher, Pakura has a sweet side as well, but you will have to try this beer to know what I am talking about (ahem vanilla ahem).
