Saule (9th Anniversary Ale) by The Bruery is a 16.1% ABV Old Ale aged in Bourbon Barrels.

This sturdy beer marks our ninth year, brewed as a testament to time with toots reaching back to our very beginning. May our supporters, our brewery and this beer grow in complexity and refinement over the years.

Our ninth anniversary ale, Saule, deeply rooted in the tradition of our anniversary releases before it – loosely based on an English-style old ale, fermented with our house yeast strain, aged in bourbon barrels and blended using the solera method for storied complexity as the years go by. Saule will not willow with age – it will age gracefully when cellared properly.

==Introduction==
Saule or “Willow” in French, in the traditional sense of the wedding anniversary gifts, refers to the 9th year in which Willow, Leather or Pottery are given. The beer was released in May 2017 and will be available to the public and many places where the Bruery beers are sold. Every year’s addition of the first ale to the new batch gives it another great layer of complexity as the original ale that is now 9 years old and the new young batch all together using the Solera method, as explained in the description, is that much more extraordinary. Every year since Fruet, their 4th Anniversary when I first tried their beers, I have anticipated each release anxiously. Aftertaste:
Rich flavorful finish of dulce de leche caramel, raspberry liqueur tiramisu, fruit cake, dark fruits, Cadbury cream eggs, dark cherries, bourbon, marshmallows, flan, vanilla, milk chocolate, raisin bread pudding, flan and cola hints. Some alcohol in the aftertaste but not detracting from the rich flavors. Dark crimson brown medium to full body, silky, smooth and creamy mouthfeel and sipping drinkability.

Overall:
Every year it seems to get more and more phenomenal. While the overall is still the awesome and insane beer I tried so many years ago, I think the more the beer keeps aging and being added to the original batch, it brings out something more complex. I wonder if the palate can actually detect something that has never been tasted and I have yet to see this but I am curious just how this will evolve. Regardless, you can never go wrong with getting this year after year.

Anime Corner:
Hana Song (송하나) a.ka. D.VA from Overwatch was used in this pairing similarly to the way I have used special suit anime characters. While only few of the label colors pair with D. VA, her overall colors pair with the flavors of dark fruits. While she does not looks like a willow/saule, her colors are similar to that of Willow from the movie with the blues and reds.

Across time, people have sought for many gifts such as the Philosopher’s Stone, the Holy Grail, Pandora’s Box, Excalibur or even the Necronomicon. Yet, mankind as curious and as ignorant as they may be, have never laid eyes on such things.

Myth, Legends and Folklore seem to have a way of providing wonder to those who seek the power of knowledge from the unknown. Yet many do not know of the Twilight Princess’ potion. Definitely something that came not from such tales but from other dimensions. For you don’t need to search over the ages and realize you have something special in hand.

Project #27 was inspired by the need to create my second mos favorite beer in the World, the Trois Pistoles. Yes, it is a somewhat common Belgian Style from Canada, but when I first started my craft beer journey, this was one of the brews that had quickly became the best beer I have ever had. Later on, I would try many more Belgians like that of St. Bernardus 12abt and Three Philosopher’s and even Judgment Day from Lost Abbey. Yes, this beer has been an important staple in my journey through craft beer that the day I finally decided was versed in the brewing arts, I could make a delicious clone of the fabled Trois Pistoles. In tribute to the original, I had given it a French name which means, The Bewitching of Twilight’s Ambrosia. The reason for the name I will describe in detail in my anime section but just know, this was for a very magical brew. Now that I have it ready for the site, let me tell you a story about it. Also, to commemorate the occasion, I will also give my thoughts on the side to side comparison of the Trois Pistoles to my version of the brew. Join me in the art of darkness, cheers to all!

Aromas:
Anise, dark candi sugar, rye bread, mild port wine, mild cola hints, dulce de leche caramel, dark fruit raisins, prunes, plums, figs, dates, dark cherries, peppercorn hints, Belgian chocolate, vanilla, piloncillo sugar cone, clove spice and banana hints.

Flavors:
Rich dark fruit raisins, prunes, plums, figs, dates, dark cherries, anise, rich dark candi sugar, sugar cane, piloncillo sugar cone, rock candy, bananas, clove spice, molasses, orange notes, coriander hints, port wine hints, raspberry, cola, dulce de leche caramel, vanilla, grapes, brown sugar, pecan pie, Belgian chocolate, mild coffee hints, coffee cake, raisin bread pudding, stone fruit peaches, ripe apricots, peppercorn spice, maple hints, apples, butterscotch, tangerine preserves, rye bread, sweetened condensed milk, honey and waffle cone.

Aftertaste:
Finishing with rich dark fruits, dulce de leche caramel, stone fruit, vanilla, earthy notes, anise, mild citrus, chocolate and port wine hints. No alcohol in the taste. Dark Amber brown full body, smooth, creamy, velvety and chewy mouthfeel along with a sipping drinkability.

The aromas between them is definitely different. It has more of the cola and port wine forward along with what I believe is their specialty house yeast. Mines breaths more of the anise, citrus and dark candy sugar and mild port wine. The flavors are nearly identical except for the Trois Pistoles which leans more toward that port wine, chocolate, and cola flavor and mines leans more toward citrus, anise, dark candy sugar, mild cola, chocolate and dulce de leche caramel. The colors are nearly identical even under the light but Trois Pistoles is slightly darker. Carbonation is more on mine but head retention is greater on the Trois Pistoles. The aftertaste is more of that specialty chocolate, cola and port wine house yeast flavor but both end on strong Dark candi sugar.

Overall:
While I do believe my beer is on its own a perfect example of a Belgian Dark, I still agree Trois Pistoles is much better. It is definitely their in house yeast and specialty spices as well as the “on lees” process which definitely gives them only a slight edge over mine. I really, really loved how close this was to Trois Pistoles. It was definitely a better brew just on its own that when I took it out of the fermentor to bottle, it was practically ready to drink. Everything about this beer from the specialty yeast and rich dark fruit flavors matched to that of Trois Pistoles. Specialty house yeast they use of course is hard to find but it is definitely that which I consider that beer to be one of my top in the world right next to St. Bernardus 12 ABT. Am really happy with how this turned out that it is definitely up there with my best brews I have ever made, right next to my Belgian Quad, Sangri Leche, Diablita Del Leche, Raging Passion Lactus Raspear Dragons and others. A recipe worth brewing several times over. Now if I can only get a hold of their house yeast.

Anime Corner:
Midna from The Legend of Zelda Twilight Princess was the chosen character for this pairing as I wanted to use a character that was both dark and mysterious but also magical and in essence. A dark sorceress but also into the whole nun/monk aspect which would fit with the Belgian abbey style of beers. The story of Trois Pistoles reflects the use of the Lucifer to do God’s biding in the creation of the creation of Our Lady of Snow’s church. Lucifer, in the form of a horse which was bridled and made to carry stones for the construction. This was carried out by a priest who summoned it to do the work. Unfortunately, a worker released it feeling sorry for it and the beast horse disappeared and the church was never finished. In my pairing, Midna wears the chains like that which the horse wore but her appearance similar to that of the dark version of the Virgin Mary also represented the church and its ties to the Vatican. Essentially, in Zelda, Midna is not an evil character, she just looks that way. She helps pay that tribute to the Trois Pistoles brew in the dark magical potion which is still as holy as the ambrosia of gods, hence the name, The Bewitching of Twilight’s Ambrosia.

2011 Bourbon Barrel Aged Grand Cru by Black Diamond is a 9% ABV Belgian Dark Strong Ale which 75% is brewed with Fruit with Vanilla Beans Added and 25% Ale is aged in Bourbon Barrels.

Label:
The designation of “Grand Cru” originates from the Burgundy region of France. Brewers have taken the term and applied to it more elaborate, aged and reserved versions of their beers. Our Belgian-style Dark Ale has been taken to the next level by the careful blending and aging techniques.

After much tinkering -with a number of unique ingredients combined with wood barrel aging- we arrived at this wonderful juxtaposition of fruitiness and maltiness which harmonized magically to produce this delicious winter warmer.

When poured, the beer has a deep mahogany hue. In the aroma, figs and dark fruit intermingle with notes from the wood barrel used, as well as subtle notes of banana and bubblegum from the fermentation process. Aging for twelve months on oak brings forth flavor of the barrel, as well as vanillin from the wood that is complemented by vanilla beans which provide a velvety smoothness and richness . The taste starts with the rich sweetness of the fruit, carries through with a rich mellow center and finishes dry, allowing for another glass as you sit by a cozy fire.

==Introduction==

I first had this beer back in 2012 for my birthday. Back then it was a beer that my brother got me as a gift. Back then I remember this one for being one for being memorable. Not only in its deliciousness but also the sentimental value since it was a gift from my brother. During a trip over to my friend Julio’s house in La Mirada California, I had visited Sammy’s VIII Liquor and they had a bottle of this aging. While the price was right, I couldn’t help but just bring it back to the site, years later after I first tried it. The artwork was really cool as well. So if it is true that the original bottle was from 2011, then I hope 5 years aged has given way to a very delicious brew. Let’s find out. Cheers!

Finishes with rich dark fruits, oak, stone fruit, mild bourbon notes, vanilla, dulce de leche caramel, marshmllow and cinnamon hints. No alcohol in the taste, crimson dark murky body, smooth, velvety and mildly creamy mouthfeel with a sipping drinkability.

Overall:
An exceptional brew with lots of dark fruit forward flavors with notes of bourbon. This brew reminds me a lot of the Deschutes Anniversary ales except where those are stouts this one is a Belgian Strong Dark Ale/grandcru. Essentially, the Belgian Dark Strong version. Ofcourse, while that is leagues away from this one, I still like this one as it was a gift from my brother a long time ago. I would highly recommend it if you love fruit forward beers with notes of oak and bourbon. Especially if you can find the aged one. Cheers!

Anime Corner:
Janne D’Arc from SNK’s World Heroes was used in this brew pairing since I used her for the pairing long ago. The castle in the label of the brew reminds me of Nockmaar castle from the movie and NES game Willow. In the movie, it had a strong swordswoman named Sorsha which wore armor similar to that of Janne. While there is no anime version of Sorsha, Janne from SNK was the closest I could find. The brew colors, label and Janne bring me back to the nostalgia of the old school Willow series I loved as a child.

Devil’s Teeth is a hybrid of an Old Ale and an Imperial Stout, two English beer styles designed to withstand long voyages and dark winters. It brings rich maltiness & robust roastiness in a thick, tongue-coating, aggressively flavorful package. To this chewy mix of old world beasts, we brought a massive dose of our house roasted Black House Blend coffee, a complimentary mix of blueberry-forward Ethiopian and chocolate-forward Sumatran coffees.

==Introduction==

Devil’s Teeth was released by Modern Times back in September 2/15. Originally, the one they had released was the Mezcal version. Unfortunately, I did not know about it and I would have to have travelled to San Diego to get it. I am glad they released the original but what made me more excited is what this beer label and the name reminded me of. I will explain this part in my anime corner section of the review but basically know it was nostalgic of something in my past. With that being said, the mix of coffees intrigues me to see what type complexities might come about from this. Cheers!

Super fancy coffee, Lactose, milk chocolate, bakers chocolate, mocha coffee, espresso, java, Kahlua liqueur, dark chocolate, fudge cake, marshmallow smores, vanilla, caramel, honey, pecan pie, crème brulee, flan, dulce de leche caramel, toffee, molasses, anise, Iris cream, whipped cream, Oreo cookies and cream, Oatmeal cookies, tobacco, dark fruit raisins, boysenberries, blueberries, earthy hop notes, brown sugar, ginger spice, hazelnut cream and cappuccino coffee.

Aftertaste:
Finishes with rich coffee and mocha aftertaste followed by vanilla, marshmallows, dark fruit, caramel and pecan pie hints linger. No alcohol in the taste, Dark full body, creamy, rich, smooth and velvety mouthfeel and easy to drink despite the ABV.

Overall:
Outstanding Coffee Stout. Like drinking the actual thing or some kind of fancy blend. The fact that they managed to blend an Old Ale probably is what makes this one much more enjoyable. There is so much complexity going on here not just from the variety of coffee but even the old ale and stout blends, a Cuvee if you will. Yep, now I have to look for the Mezcal version and see how more complex that one is. Either way, you can’t go wrong with this one so go get it!.

Anime Corner:
Astaroth from Shinra Bansho was used in this pairing to go with the whole aspect of Devil and the Teeth. Also, when I first saw this beer, the name and colors reminded me of the Devil’s Eye from NES’s Willow. A weapon that can only hurt the undead and the highest stat weapon in the game. This was definitely a tribute to my childhood playing the game but also fits well with Astaroth as she is blue and red similar to the colors of the label. All and all, I had a good feeling about this beer and my feeling were right.
