Snörkel by Jester King brewing is a 4.8% ABV Saison/Farmhouse Ale brewed with Oyster Mushrooms and Sea Salt.

Just beneath the surface , the under currants begin to pull and guide an exploration, a pulsing kinesis into hidden depths. Its pathways are ghostly filaments laid out side by side and stretched endlessly across the universe. Serenely, they resonate, their soft hum producing the harmony of existence. Gilled bodies curiously emerge from the obscurity and generate a returned interest. They are vessels for a future passage.

Jester King is an authentic farmhouse brewery in the beautiful Texas Hill Country, on the outskirts of Austin. We brew what we like, drink what we want and offer the rest to those who share our tastes.

Notes:
Snörkel is brewed with oyster mushrooms from Logro Farms in Austin, Texas and alderwood smoked sea salt. It takes inspiration from traditional German Gose, but sets out to explore the curiosities of umami. Unfiltered, unpasturized, 100% bottle conditioned.

From the brimy deep, comes this Umami Flavored (Salty, sweet, sour, bitter) beer which was fished out of the great depths of Jester King’s great oak barrels by my friend Aaron Mendiola at www.beermetaldude.com. This beer to me was like, I have to have it especially since it was not only a deep sea kind of beer but the use of the oyster mushrooms and salt with a saison, it really appealed to me. So here we have it, the great donation of Snörkel. Cheers!

Aromas:
Funky oak, pepper corn, flowers, mushroom, mild smokey notes, apple hints, lime peel, stone fruit, vegetable hints, ginger spice hints, berries, farmhouse hay, tamarind hints, tejuino, biscuit bread and champagne.

Flavors:
Funky oak, Sea Salt, Oyster notes, mushroom plant notes, mild tomato hints, flowers, floral notes, biscuit bread, honey, farmhouse hay, agave hints, lime peel, seaweed hints, ginger hints, green apples, red apples, champagne, white grapes, peppercorn, stone fruit, smokey notes, oak, smoked mushrooms, coriander spice, tejuino, tamarind hints, biscuit bread, elderberries, strawberries, stone fruit peach, apricot, basil, grassy hops, white grapes and celery.

Aftertaste:
Bitter lemon, mushrooms, celery, citrus, salty, smokey, mild hop hints and coriander spice. No alcohol in the taste, crisp and refreshing, easy to drink, hazy pale milky body and smooth mouth feel.

Overall:
Damn good saison. I can already see this fitting as one of the best sea food pairings. If you are not into salty or sour beers, this one may not be for you. I have to admit that Salty and sour or bitter (even extreme sweetness) is something I enjoy so a palate that really enjoys these will like this one. Despite the ABV, a lot of salty, sour, sweet, smokey and bitter things are going on here. I will recommend it if you have a palate for the salty, sour, bitter and sweet type of beers.

Anime Corner:
Original Mermaid character was used in this pairing since it matches with the salty deep blue sea of the label and ingredients. She emerges and sits around the coral like the oyster mushrooms seem to sit like corral themselves on the ocean floor. Salty like the seawater, sweet like the beauty of the corral, sour like that wild yeast which is alive in the liquid beer and bitter like the plants of the sea floor as well.
