Au Revoir Shoshanna by El Borracho brewing is a 5.25% ABV Saison/Farmhouse Ale brewed with chamomile, lemon grass and orange peels.

==Introduction==

The fall has hit and my friend William has been busy prepping some new line of beers for the colder season. To start, he ended up brewing this saison in reference to a French quote in one of his favorite movies, Inglorious Basterds. For being his first saison, he added several ingredients to the brew. The use of chamomile, lemongrass and orange peel seems very fitting as many breweries use different types of herbs and flowers to make some saisons.

Aromas:
Herbal, Lemongrass, oregano, peppercorn, chamomiles, citrus, farmhouse hay, funky must, green tea, apple hints, stone fruit, grapes and biscuit bread.

Flavors:
Citrus, Orange peel, grapefruit, chamomile, green tea, basil, oregano, biscuit bread, banana, clove spice, peppercorn, sage, tangerine gummies, musty grapes, tejuino hints, floral notes of lavender, hibiscus, black tea, lemons, lemon peel, honey, agave, apple hints, stone fruit peach, apricot notes, vanilla, grassy and earthy hop notes.

Aftertaste:
Finishes dry with rich herbal notes of chamomile, orange, grapefruit, vanilla, honey, earthy hop and stone fruit hints. No alcohol in the taste, Clear to medium honey colored hazy body, crisp, refreshing, smooth and effervecent mouthfeel along with an easy to moderate drinkability.

Overall:
A very delicious saison with unique herbal flavors. As the beer warms up more of the chamomile is released creating an orange and herbal tea of sweet and funky farmhouse flavors. I do find it an interesting choice as my friend will is not fond of saisons some of the times but what he has here is very definitive of the style and complex like the delicious saisons from Monkish brewing or Jester King too. I hope he makes more of these!

Anime Corner:
Original character by Azuma Syoujuan was chosen in this pairing as I wanted to gather similar colors but also the focus on chamomile in the beer. As you can see, you have the green for lemongrass and the overall orange theme works for the orange peel and the honey colored beer. In reference to the name, it is interesting how in the scene where Landa is about to shoot Shoshanna who is running through a field filled with similar colors and let’s her go uttering the words. The piece of art work I chose denotes the similarities in the scene like the flying of birds or swimming of fish as the action of running and the way sound of awesome music runs through the air mimicking that of the scene of freedom as one slips into bliss. So synonymous of the scene where essentially he had to choose between 2 freedoms. Freedom via Death for Shoshanna or Freedom to let her live. The beer has a meaning of its own where the consumption of the saison frees one of problems. Say Goodbye to your inhibitions!

Despertado en Manzanilla by Freetail brewing is a 7.3% ABV American Wild Ale brewed with Chamomile and aged in oak barrels.

The first batch of Witicus at our new S. Presa digs was a lesson in brewhouse perseverance. We put it to bed in a combination of our old pub barrels that produced Ananke and Woodicus, as well as newer barrels recently relinquished from viticulture. We crossed our fingers and dreamed of Woodicus. What we got was an unexpected delight: rough-edges smoothed over, slightly tart nuances threading through and chamomile awakened in all its humble glory.

==Introduction==

Awoken in Chamomile as stated by the name was a brew that was traded to me by my friend Aaron Mendiola from BeerMetalDude.com. This one uses Freetail’s base brew, Witicus but aged in oak with some Chamomile. A very awesome sounding beer that we were able to bring to the website thanks to Aaron. There aren’t many brews out there that use Chamomile in the beers and to have this one here is very unique. For Freetail brewing, let’s see how their Chamomile beer stacks up. Cheers!

Aromas:
Stone fruit apricot, peaches, lime notes, orange peel, cane sugar, chamomile, honey, floral notes, hibiscus, peppercorn, oak, wine notes, funky notes, banana hints, strawberry hints, biscuit bread, crème brulee hints, yerba buena mint and brown sugar.

Flavors:
Honey, Chamomile, hibiscus notes, floral notes, peppercorn, oak, white wine grapes, funky notes, wheat bread, coriander spice, Stone fruit apricot, peaches, lime notes, orange peel, cane sugar, honey comb, banana hints, strawberry hints, biscuit bread, crème brulee hints, yerba buena mint, green tea and earthy notes.

Aftertaste:
Finishes dry with some notes of oak, chamomile, oak, wine grapes and cake sugar. No alcohol in the taste. Golden Honey colored full body, crisp, smooth, refreshing and rich mouthfeel with an easy drinkability.

Overall:
A very good beer. Some notes of the chamomile are present but mainly some complex goodness melds together into a very nice tart brew. I think fans of saisons and wild ales will dig this one. Thanks to my friend Aaron for this delicious brew and Freetail for making it. Hopefully, one day we can get Freetail beers around the west coast.

Anime Corner:
Original Bee Girl was used in this pairing as it represents the bee and the colors of the flavors and the label of this beer. Bees and bats go hand in hand like I stated a while back in my homebrew about how they relate to extracting nectar from flowers. The same nectar that coincides with the delicious nectar of this beer and the Chamomile flowers the bees get it from. So to me the bee girl was the good choice for this.

Floraison by Monkish Brewing

Floraison by Monkish Brewing is a 6.4% ABV Saison/Farmhouse Ale dry flowered with Chamomile and Hibiscus.

COMMERCIAL DESCRIPTION (Ratebeer.com)
An experimental summer beer that starts off in a saison direction with oats and wheat but steeped with hibiscus and chamomile. Then the beer is “dry flowered” with more hibiscus, chamomile, and sterling hops. Floraison is robed with pinkish & orangish hues and gives a bouquet of floral, spicy, tea-like aromas and flavors.

Picked up a growler fill at Monkish Brewing at Torrance California. They have been one of my favorite growing local breweries and one with Belgian specific theme going on with the beers. I have reviewed 2 beers so far but this is my third favorite from them and is one that I always pick up. It is now joke with chamomile and hibiscus, you can definitely taste it.

Aromas:
Lots chamomile, hibiscus, peppercorns, biscuit bread, honey, floral hops, green tea, brown sugar, cinnamon, vanilla, caramel, raspberry notes, sun flowers and oats.

Flavors:
Hibiscus flower(Jamaica) flavors, pink peppercorns, oatmeal, barnyard funk, hay, chamomile, vanilla, honey, green tea, citrus, tart raspberries, cranberries, biscuit bread, caramel, coriander spice, cinnamon, herbs, raisins, apples, apricots and cherry.

Aftertaste:
Floral and grassy finish with some citrus and chamomile lingering a bit. No alcohol in the taste, easy to drink with a crisp and refreshing taste.

Overall:
Very good beer reminding me of the chamomile teas my mother used to make for upset stomachs. The hibiscus adds a great amount of flowery complexity. This is my third favorite beer from Monkish next Anamoly and Seme De La Vita. They are slowly distributing the to stores but if you happen to be in the southern California area near Torrance, you should definitely stop by the brewery and give Monkish a try. 

Anime Corner:
Vocaloid Luca drawn by okingjo was used as the inspiration for this pairing to portray the very flowery aspects of the beer as well as its pink colors. The word floraison means to blossom and she is definitely blossoming some very good colors to pair with the beer. The whole wedding dress aspect of it is tied to this beer being of an Abbey Style which leads to Monks, which leads to church which leads to people getting married. So a link in that direction was definitely one that was well fitted for the Floraison beer.
